Asparagus Egg Cups
Springtime means lots of green vegetables, and these asparagus egg cups are a great simple way to get some veg and protein. A perfect on-the-go breakfast option, or as a side dish!
Try it with different vegetables depending on the season or your preference.
Ingredients
6 spears of asparagus
1 tablespoon olive oil
1 small red onion, thinly sliced
6 large eggs
feta cheese
1 teaspoon of paprika
1 teaspoon of garlic powder
Salt & Pepper
Equipment
Air fryer or oven
Silicone muffin cups
Instructions
1. Rinse the asparagus, trim off the ends, and chop them up into smaller pieces.
2. In a bowl, season the asparagus with olive oil, salt & pepper.
3. Put the asparagus in the air fryer, and cook for 7 minutes at 200°C (400°F) - if you are using an oven, cook the asparagus for 12-15 minutes at 220°C (425°F).
4. While the asparagus is cooking:
Thinly slice the onion
Combine the eggs, onion, paprika, and garlic powder in a container with a spout - measuring cup for example
5. Pour the egg mixture into each silicone cup evenly, leaving some space for the fillings.
6. When the asparagus is cooked, take them out of the air fryer (or oven), and let cool for a few minutes.
7. Add the asparagus and feta cheese to each cup.
8. Carefully place the muffin cups into the air fryer and cook for 12 minutes at 150°C (300°F) - you may have to cook in batches depending on the size of your air fryer and your silicone cups.
9. When ready, take out of the air fryer and enjoy!
