Sweet Potato Egg Bake

This baked egg recipe is about as simple and quick as it gets … if you’re quick at dicing sweet potatoes!


Roasted Sweet Potatoes & Baked Eggs

Ingredients

1 sweet potato - cut into cubes

1 tbsp olive oil

2 eggs

Garlic Powder -  to liking

Red pepper flakes - optional

Salt & pepper

Instructions

1. Preheat oven to 190˚C/170˚C fan/gas 5 (375˚F).

2. Cut the sweet potato into cubes. In a small oven dish, add the sweet potato, olive oil, garlic powder, red pepper flakes (optional), salt & pepper. Mix until the sweet potato is evenly covered.

3. Bake for 25-30 minutes or until slightly crispy.

4. Remove from oven. Make two wells & add the eggs.

5. Season again & bake for 10 minutes or until the eggs are to your liking.

6. Enjoy!
