One-pot Cauliflower & Leek Pasta
This simple Cauliflower & Leek Orzo dish only requires one pot and 30 minutes of your time! Delicious, filling and full of nutrients!
Ingredients
3-4 tablespoons olive oil
1 shallot, thinly sliced
3 garlic cloves, thinly sliced
2 leeks, white and light green parts, sliced in half lengthwise & cut into thin half-moons
1 head of cauliflower, cut into small florets (~ 4 cups)
1 1/2 cups of dried orzo
3 1/2 cups of vegetable broth
Optional:
3-4 handfuls of spinach
Instructions
1. Slice the shallot, garlic, leeks & cauliflower.
2. Heat the oil in a large pot over medium-high heat.
3. Add the cauliflower, leeks and shallots and cook for 5-8 minutes. Add the garlic, and stir for another minute.
4. Add the orzo and pour in the broth and bring to a boil.
5. Reduce the heat to moderately low, cover and simmer for about 10-12 minutes, until orzo is cooked. Stir frequently to avoid it sticking to the bottom.
Optional: when the orzo is nearly cooked, add spinach and cook for another few minutes
6. Add salt and pepper to your liking and serve.
